I have her books,but the recipe that you are using is the one she call “ponche cubano”.I’m from Guyanabo, Puerto Rico and I know people have different version or family recipes”but that’s not the real COQUITO.Some people, like to put Anise like Valldejuli,some people like to do it with brandy and other with different fruit flavors. each person has his own “toquecito”and that’s okay, Eggnog and Creme de Vie are the one that have eggs. Coco lopez is just the brand you can used any coconut milk.

You recipe sounds delicious.. but I got mine from Carmen Avoy de Valdelluli.. she wrote one of the first books of Puerto Rican cooking in the 50ths.. before coco lopez,, and all the new ingredients that people are adding..also my family is from Las Piedras Puerto Rico and in El Campo people make their own leche de coco to do it.. always adding eggs.. again… also.. leche evaporada is added when making Ponche Crema.. but that is a different recipe.. take care.. The real coquito doesn’t have eggs! 3 cans Evaporate milk, 2 can Coco Lopez, 2 can condensed milk, 1 cup Don Q Crystal rum, and cinnamon to taste!

Yes, just add eggnog, it will taste the same, but if you are allergic to eggs, skip them. It won’t make that much difference taste wise.
